Title: Lemony White Bean Soup

While looking for a quick, fill soup recipe for this weekend and for lunches next week I cam across this one...

Actually, I came across a number of very similar recipes, some with chicken, some with turkey.

Tomorrow is going to be a totally crap day (snow morning, rain for the bulk of the day), so this sounds like a perfect recipe.

I highly recommend this soup.

I did add about 1.5 pounds of browned ground turkey (which another recipe I found had) and substituted frozen spinach for the escarole.

I also sliced the lemon thinly, depitted it, and simmered in in the soup for the last 15 minutes for so.

Perfect dinner for a cold, gray Sunday night.
