Mashed potato recipe

Some on here was talking about their great method of making mashed potatoes with cream cheese.

Please share the secret  grin

5 lbs potatos
1 lb (4 sticks) lighlty salted butter
1 lb (2 8 oz packages) cream cheese
pinch of allspice
salt and pepper to taste

Soften butter and cream cheese (let stand at room temp for 1-2 hers). Peel potatos, cube or slice, boil to desired tenderness. Mix or mash together. It's easier if you slice or the butter and cream cheese first. Serves 8-10.

If you have any left over (doubtful) add an egg and thin ever-so-slightly with some milk. Fry in bacon grease. Potato pancakes! Nummy!

I don't use cream cheese, but use sour cream in mine.

It's not necessary to peel the potatoes, although I'll be the first to concede lots of people don't care for potato skins. Personally, I like baked potato skins at least as much as the rest of the fruitor vegetable, or whatever exactly it is.

I've been known to bake potatoes, slice them in half, scoop out the whites, mix it with sour cream and butter and whip it, and return it to the skins and bake them awhile longer with shredded cheddar and Hungarian paprika on top. I'm not sure those are actual mashed potatoes, but they're tasty.

Add a lot of butter, partially mash and make sure butter is melted and mashed in, add enough milk to make the mashed potato's more creamy in texture.

Potatoes
Butter
Salt & pepper
half & half

Wash then scrub (not peeled) and rinse, then boil potatoes. When ready, drain and add butter, salt and pepper - replace lid for a few minutes. Mash, then add half & half, stir, then beat the daylights out of them with a large fork.

Sometimes I've added finely chopped raw onion and or garlic with the butter.

Except for the paprika, that sounds exactly like my wife's "twice baked potatoes".

If you peel a potato you're throwing away the most nutritious mineral and vitamin packed part.

That said:

Mash however much potatoes you want and then add sour cream, grated cheese, finally chopped garlic, bacon bits, salt and pepper in proportions to suit your taste (I liike lots'a bacon, sour cream and cheese) and then stir - not beat - it all together. Very much like eating a baked potato loaded.
