I have never tried to make cornbread from scratch.  However, I know biscuits made from scratch are an order of magnitude better than store bought mixes so it might be something I need to try.  I don't eat cornbread often enough.

I first made cornbread after one of these threads (maybe this one). Resurrecting it reminds me that I haven't made any in a good while and need to. Right or wrong (and I don't care :P  ), I ended up using this recipe and find it delicious. Seems like the cast iron is key:

That looks like a pretty good recipe, except maybe too much sugar.  About 2 Tbsp is what I'd use. 

When I was a kid we got a Corona grain mill, and we'd grind fresh cornmeal to make cornbread.  (the corn wasn't anything special)  Freshly-ground corn -- kinda coarse and with the germ still in it -- made a yuuge difference.  I still have that mill and use it to grind malt for making beer.

I make darn good cornbread.  My own recipe.   Not really feeling the need to see folks argue about it.    :)

I haven't been able to get in a reasonable crop of Floriani Red flint corn in a couple of years due to squirrels and deer.

Best cornbread I've ever made used the Floriani Red flint corn I grew and hard red winter wheat purchased from a farmer about 5 miles up the road, that I ground into flour myself.
Bacon grease from pigs that I raised.
Unpasteurized whole milk and fresh churned sweet cream butter traded from a family about 3 miles away.
The only thing not sourced locally was the salt and baking powder

I need to check with the local hippie-food store; see if the have bulk bins of yellow dent corn.  (I don't need or want 50 lbs)  I don't think I've seen flint corn, except for popcorn or decorative ears of Indian corn.

Where did/do you get your seed? I'm thinking of trying to grow a few rows of flint corn next season. Fortunately my garden is deer and squirrel-free. Usually I'm just fighting the heavy clay soil and my lack of time to keep up on weeding and insect control.

I don't remember for sure. I may have the remainder of the seed in a bag in the freezer though.
It was some hippie-dippie organic seed co-op but price was reasonable.

Baker Creek has several varieties of flint corn.  http://www.rareseeds.com/store/vegetables/corn/  My brother has ordered weird seeds (like Roselle) from them before and had good luck with 'em.

We often had cornbread in milk and sprinkled with sugar for dessert. Maybe I should toss in a few chocolate chips the next time I make cornbread to make it a true dessert treat. :)

Buttermilk cornbread (my Grandmother's recipe)

Recipe good for one 9" round or 8x8 pan. Double all ingredients for 9x13 pan.

1 ½   cups cornmeal
½ cup AP flour
1 teaspoon sugar
1 teaspoon salt
2 teaspoons baking powder (I use aluminum free. I think the regular stuff imparts a bitter flavor. -Brad)
½ teaspoon baking soda
1 ½ cup buttermilk
¼ cup vegetable oil
2 eggs

Heat oven to 425. Combine ingredients in a large mixing bowl. Stir or whisk until blended. Pour into greased baking dish. Place on middle oven rack and bake for 25-30 minutes until golden brown. Remove and let stand for 10 minutes to cool.

For sweeter cornbread leave out sugar and add ½ cup honey.

Made my chili and Jiffy corn muffins on Sunday. Having the last of the muffins with left over chili for lunch today.

I'd forgotten how good the Jiffy corn muffin mix is. Produced a very light, very tasty, muffin.

I think I'm going to start keeping a couple of boxes in the pantry for winter use with soups and stews.

^^^That is what we use as the base for the jalapeno cornbread that we make: add a small can of creamed corn, a small can of jalapenos and one cup of shredded sharp cheddar cheese and then bake.  A very moist and flavorful cornbread.
