Title: Yummy - Crock Pot Chicken Fajitas
Post by: TechMan on March 11, 2012, 09:43:36 PM: SWMBO made this for dinner tonight and let me it was delicious!!!

Crock Pot Chicken Fajitas

1 yellow onion, sliced

3 sweet peppers, sliced

1 Â½ pounds boneless chicken breast or thighs

Â½ cup chicken broth

Â½ teaspoon salt

2 tablespoons cumin

1 Â½ tablespoons chili powder

Squirt of lime juice

Tortillas

Fajita fixings

Combine sliced onion and peppers in the bottom of a greased crockpot. Lay chicken on top of veggies. Pour chicken broth over top. Sprinkle everything with cumin, salt, and chili powder. Give a nice quirt of lime juice over the top. Cover and cook on low for 8 hours. When meat is done, shred with two forks and stir back into juices. Serve meat mixture with slotted spoon on tortillas with your choice of fixings.

True, but grilled fajitas don't. They aren't really fajitas at that point, just chicken strips.

We did sour cream, cheese and salsa.

I didn't say grilled chicken fajitas just chicken fajitas. =)

Yeah, I know and I have eaten "fajitas" like that. It is not the same thing by a mile to the point I wouldn't call them fajitas at all.

Agreed. Sounds like a delicious chicken taco filling, just not fajitas.

Most nothing comes bad from crock pots.

I've eaten a few things others have made from crock pots that tasted like *expletive deleted*it on a stick.

that's because they used the crock pot as an ingredient instead of a tool!

Post by: Fly320s on March 12, 2012, 10:53:25 PM: Thanks to Adively's inspiration, I made steak fajita tacos tonight. I used the broiler not a crock pot, though. Washed them down with Rahr & Sons beer. Ate outside in 75 degree weather.
