Actually, with the instant freezing of a freon burn, the cellular damage from ice crystals isn't nearly as bad.
If the freezing process is slow, such as with frost bite, the ice crystals get nasty long and jaggy and really do a number on cells.
The faster the freezing process, though, the smaller the ice crystals, fewer jagged pointy ice needles, and lots less cellular damage.
That's why flash frozen products, frozen at temperatures as low as -50 deg. F, have much better textures than products that are frozen in your home in your refrigerator's freezer.
