Friend of mine who is vegetarian sent this to me.
http://www.eatingwell.com/recipe/257784/broccoli-edamame-cabbage-millet-salad/
I used barley instead of millet, she used orzo, as neither of us could find millet.
I also substituted dried cranberries for the apricots as I don't care for apricots.
I think next time I make it I'm going to add a diced Anaheim or Serano chili to give it a bit of background heat.
All in all very tasty, and quite filling, but holy hell it's colonic Drain-O with all that fiber.

No bacon? =(

Something I've gotten hooked on lately is rosemary infused olive oil as a salad dressing. Growing my own rosemary means I have a surplus of the stuff (it's almost as bad as squash in terms of volume produced to volume used.

It's vegetarian, although I've seen a number of references to pairing it with chicken or fish.
I'm thinking of searing a tuna steak on the grill to go with the left overs.
Bacon would add a nice back flavor.
Even better would be to make the vinagrette with bacon fat.

Well hell, dude, I'll take some of your surfeit of Rosemary.
I LOVE the stuff.

Get over here and harvest some. I just cut a huge amount and gave it to a coworker, but that was just one plant. That plant has a ton left and I have another entire plant to harvest from.

A man can live on packaged food from here 'til Judgment Day if he's got enough rosemary.
-
Just has some more of the salad. Much better for sitting overnight.
And extremely much better when paired with some grilled chicken.
Adding some hot sauce?
WINNER WINNER HEALTHY SALAD DINNER!

Quite possibly. I've also been cooking my eggs in the rosemary oil and butter. Breakfast was an omelet with jalapenos from my garden, cheese, and cooked in rosemary OO with a pat of butter added. All this in my cast iron pan. :)
Lunch is going to be more of the same. Perks of working from home...

I bet it would be good with smoked whitefish instead of chicken.

Maybe even a Coney Island Whitefish...
I'm thinking of doing a marinated, seared tuna steak to go with it. I'm betting that will be pretty spectacular.

Probably a bit too chewy. [barf]

I use raw broccoli a lot in salads; sometimes it's mostly chopped broc crowns with very little lettuce.
-
I had to use frozen broccoli.
