I modified a recipe and recently made this for a party. I went home with an empty crock pot.
5-12 oz bags of frozen sweet corn kernels
16 ounces of sour cream
1 cup of mayonnaise
3 tsp chili powder
1 tsp garlic salt
1 tsp cayenne optional
8 oz queso fresco cheese
8 oz of grated Cojita cheese
1 bunch of cilantro (for garnish)
Put the frozen corn in a crock pot on high, add mayonnaise, sour cream and spices. stir well. Stir occasionally until the corn in thawed and warmed up.
Once the corn is getting warm, cube the queso fresco into small cubes and 1/2 of the cojita chese and incorporate into the corn. Turn the crockpot to low and cook until the cheese is melted.
Before serving, chop the cilantro, stir 1/2 the cilantro into the corn. Take the remaining cojita chese and sprinkle an even layer on the top, and garnish with cilantro.
Enjoy.
You can speed up the process using thawed corn.

Pretty much, depends if you use frozen or thawed sweet corn kernels.

It's going to be Seren an me for Christmas this year, so I think I may make this for Christmas dinner.
Thinking of making a turkey cranberry meatloaf, as well. Seren absolutely LOVES turkey meatloaf.

As Mike said parma. I find Cojita cheese on the shelf at the store next to the Mexican foods. It's in a container like parma.

The one thing about living in an area like DC is that most stores have a decent selection of ethnic foods. It's really easy for me to get tortillas, masa, chilies, and dairy goods like crema and various cheeses. My local grocery carries Cojita in both crumbles and blocks.
