Most of them, if they don't have the latest version of Android will update when the latest version is released for their particular device.

How concerned should I be with having the latest version of Android? A lot of the phones have 2.1 (Eclair), but 2.2 (Froyo) is out now. Does it matter much?

Uhh.. 2.3 (Gingerbread) is out now.  I'm not sure if any of the carriers support it yet, but it's released.

If you want to be able to upgrade make sure the phone's got at least 5121MB of RAM in it.  My Droid w/ 256MB absolutely choked on a Ginberbread based build when I tried it a couple of weeks ago.

I had a droid X for 6 months. After three phones, I came to the conclusion that the phone itself is a gigantic piece of *expletive deleted*.

My granddaughter said much the same thing. We got hers around the end of January, she's already on phone number 2, and just today she brought it in around 3:00 p.m. and said "I had this on the charger all night, and now the battery is dead." There's a higher capacity battery available (for 80 bucks -- OUCH!), but it doubles the thickness of the unit, and they DON'T have a protective plastic shell that fits it with the hi-cap battery installed.

Keeping your battery up and running for more than 16 hours is an exercise in itself with an Android phone it seems.  At least with the Motorola Droid and Droid X.  I'm sure if other manufacturers ship with better batteries or not.

There are gobs of apps out there that try and help you manage the battery better.  Not fun if you just want a phone that works.  Interesting for dorks like me though.
