Pretty close anyways, except no Rotel and I added mushrooms. Awesome Lawdog, just awesome. It's very close to what we call "Chicken Cacciatore" or "Chicken Pizziola" (sp) but the chile powder and the cumin add a whole new twist! We've found a new one to add to the family favorites. Thanks Dog! I'll try to remember to get some Rotel in there next time.
Here's one I learned with Rotel:
Chli Con Quesa
1 lb sweet or hot sausage diced
1 lb Package of Velveeta diced
1 can Rotel
1 tsp Cilantro or more to taste
A few Jalepenos to taste if you like your heat
Brown and drain the sausage in a 3 qt pot, take the cheese and toss it into the sausage with the Rotel, Cilantro and Peeners. Put it on low heat and let it all melt together. Stirring occasionally, don't let the bottom burn. Serve in small bowls with Nachos on the side.
Personally, I'm kind of a wimp so I use sweet sausage and skip the Jalapenos.
Got this from a chili cookoff contestant a few years back. Another hint I got once was to put a little balsamic vinegar in your regular old red chili. Adds a nice zing...
