SWMBO and I are looking for any good crock-pot/slow cooker recipes.  Post them here.

I haven't had an occasion to try this one yet.  It's made in one of those Bigass (or Nesco) electric turkey roasters:

American Legion Funeral HotDish
(Colette Flynn, owner of Catered by Colette in St. Louis Park, MN)

5 lbs. ground beef
1 large onion, chopped
1 (16-oz.) bag frozen sliced carrots
1 (16-oz.) bag frozen cauliflower florets
1 (16-oz.) bag frozen chopped broccoli
1 (50-oz.) can of cream of mushroom soup
1 (50-oz.) can cream of chicken soup
1 bunch celery, chopped
1/4 cup soy sauce
1 tsp. white pepper
3 (12-oz.) bags chow mein noodles

Fry hamburger and chopped onion in a large cast-iron pan, breaking it up into small pieces with a potato masher. Place in a large roaster. Mix frozen vegetables, soups, chopped celery, soy sauce, and pepper in a bowl. Pour into roaster and blend with meat. Fold in two bags of chow mein noodles, cover, and bake at 325 degrees for 75 minutes. Remove from oven. Sprinkle remaining bag of chow mein noodles on top. Put cover back on and bake another 15 minutes. Serves 50.

    Crock Pot Salsa Chicken
    Ingredients
    • 4 chicken breasts
    • 1 jar salsa, 15 oz.
    • 1 can corn
    • 1 can black beans
    • 1 tsp cumin
    • 1/2 C cilantro, chopped
    • 1 8oz package cream cheese(Optional)



    Instructions
    Combine all ingredients and pour over chicken.
    Cook in crock pot on low for 6-7 hours or until chicken shreds easily.


    Amazing stuff. Good to make burritos, nachos, etc... You can make it without the cream cheese and it's very good. I really like it with the cream cheese. [/list]

    Take your Crock Pot/Slow Cooker's liner and toss it in the oven at 500-550 degrees for an hour or so. Do this before you use it if you've never done this before, or do it after washing it and letting it dry.

    The oil, grease, and crud that bakes out of the micro-cracks in the glaze is enlightening to say the least.  :P  I now do this every time before I put it away after washing it.

    They really ought to make them out of Pyrex.  =|

    AlsoLawdog's Texas Chicken Soup.  Leave out the chicken broth and use a bag of frozen corn instead of canned to make it more of a stew then a soup.

    Robert prefers that we sprinkle shredded cheese on a plate of nacho chips, nuke that for 30-45 seconds in the microwave and use those to scoop the TCS from your bowl. 
    Some days even my lucky rocketship underpants won't help.

    Take a whole chicken
    Stuff orifice with onions
    Put in crock pot
    Sprinkle on spices to you liking, can include
    Salt
    Paprika
    Garlic
    Pepper
    Some hot pepper also

    Add NO liquid

    Cook for at least 6 hours

    Enjoy

    I broke mine out for the first time since early spring on sunday.

    But I didn't get fancy. Chunk of beef, carrots, 'tators, onion, with a couple cups of water, bullion cube, and then added mushrooms about two hours before the end.
    I did toss some rosemary and a couple bay leaves in there.

    My only trick with that is I mix salt, pepper and dried sage in flour and coat the chunk with it before I brown it. I throw the rest of the flour mix in the pot along with everything else.

    My spaghetti sauce:
    2 large cans of tomato sauce
    1 regular or 2 small cans of paste
    1-2 pounds of 'country style' pork ribs - BONE IN, very important!
    1 medium onion
    1 medium carrot, peeled
    1/3-1/2 canister of 'italian seasoning' (or whatever mix you like, I prefer the ease and freshness of a new canister over having to mix my own selection up)
    1 tsp-tblsp of crushed garlic
    2 bay leaves

    Optional Extras:
    1 tsp brown sugar
    ~1/4 bell pepper
    cayenne pepper
    etc...


    Trim 'most' of the fat off the ribs, puree everything but the meat & bay leaves in the blender, pour into pot, add the meat and poke the bay leaves in.  Cook for ~6-8 hours, or whenever the smell pervades the house and makes everybody too hungry.  You'll want to skim the fat that's collect at the top off and discard, or if you like hard arteries stir it back it.  I understand there's fancy paper that will do that, but I just use a spoon.

    Please note that I have a relative that's allergic to anything resembling *raw* tomato, but pureeing&canning denatures whatever she's allergic to.  Thus you can probably use fresh stuff or make if you like.

    Package of 4-6 chicken thighs
    Package of 4-6 drum sticks
    1lb of red or white potatoes cut up into one inch squares
    1 Vidalia onion cut into large pieces
    2 tbsp. minced garlic. Fresh FTW
    1 tbsp. ground pepper
    1 cup of baby carrots
    Two large bottles of BBQ sauce.

    Put everything in the crock pot. Cook on low for 8 hours or high for 4-5 hours.  Check chicken for doneness. 

    Adjust the recipe to fit a larger crockpot if you have the room.

    Death by potluck

    1lb spicy sausage
    1 onion, diced
    4 tbsp. minced garlic
    one package velveta cheese
    1 can rotelle.  If you've got balls use the hot.

    In a pan, sauté the onion, then add the garlic and then brown the sausage.
    In the crockpot, break up the velveta and add the rotelle. On low.
    Once you're down browning the sausage mixture, add it to the velveta.
    Great dip for football, poker night or potluck.

    My family's spaghetti sauce recipe:

    1lb ground beef.  I've used buffalo (better), ground pork or sausage (okay), and turkey (not better) as well.
    2 large cans tomato  (or puree if you are watching the sodium)
    2 cans diced tomatoes (no salt added)
    1 can mushrooms
    1 can tomato paste
    1 large yellow onion
    lots of garlic
    celery and finely diced bell peppers (optional)
    parsley, sage, rosemary, thyme, basic, oregano, bay leaf (as many of these fresh as possible)
    little bit of chilli pepper
    salt to taste

    Brown the meat, adding olive oil if needed due to lean meat.
    When the meat is almost browned add in the onion (diced) and the garlic until the onions are cooked.
    Drain the fat (if there is any to drain).
    Dump everything in the crock pot for many hours.

    Server over standard spaghetti noodles and a side of pesto

    dead simple:  a 2-3 pound chuck roast OR 2-3 pounds of stew meat OR whateverthehell beef that is in the freezer.
    Saturday night  Put beef, a package of Lipton's dry onion soup mix and a can of condensed mushroom soup inna pot wif it.  Coupla shakes of Worchestershire sauce, some ground black pepper.
    Cook it on low all night
    Sunday Morning:  before going out to church (or golf, or hunt), put in some small red potatos and peeled baby carrots, crank it up to hi.

    Come back in from whatever, and you have a treat ready.

    Did this and thank you for grossing me out. Probably not really a sanitation problem, more like flavor says the guy that never washes his coffee cup. But anyway, everything came out of the unglazed ring on the bottom, smoked the whole house up and left a puddle of disaster in the oven.

    You can make lasagna in a crockpot, btw. Same recipe as an oven.
