Winter greenhouse veggies

My greenhouse is up and running. I want to start next summer's veggies early, such as tomatoes, etc., but I also want fresh stuff over the winter.

Let me know what you think I should plant. I have a fair amount of space; about 120 sq ft, water service, electric, mild climate with availability to heat the space, may install lights, and I enjoy cooking.

My initial plan was MJ, Khat, Cocoa, and Opium poppies. I think I will lean more towards herbs and root vegs.

Currently I have lettuce, carrots, beets, onions, and a bunch of herbs going.
Vigilate hoc, tenendum per ebrietatem.

Swiss Chard, cabbage, bok choy, all good cool season options.

Parsnips, broccoli, brussels sprouts, shallots, garlic

Depending on how much heat you want to drive into it, bush tomatoes and peppers, as well.
