Not really in my cooking realm, but I do love eggplant parmigian.... but it's not really diet friendly right now.
Thought about baba ganoush, but I'm not that crazy about it.
So I went looking for recipes, and came across one for eggplant "meat" balls. Going to give this one a try this weekend.
May roast the eggplant on the grill instead of in the oven. Not sure.

Grilled marinated eggplant is tasty.

Cut slices 1/2” thick, brush both sides with olive oil, salt and pepper, grill.

Wow. OK, I was not expecting that. I made the meatballs.
They were VERY good. The texture was really creamy and a bit chewey and crispy on the exterior. Had someone asked me I would have thought I was eating bean based meatballs only, no eggplant.
The bottoms where they were on the banking sheet got nice and golden, but the exterior otherwise didn't brown. I'm thinking they would do well in the air fryer.
All in all, really really good recipe.

Glad it worked out for you. I would consider something traditionally made from meat (meatballs) to be made from a plant (plantballs) an abomination, kind of like the jar of yellow liquid they were trying to pass off as plant based eggs* I saw the other day. Of course my revulsion at the thought of eating eggplant may be playing into that.

Made the eggplant meat balls again over the weekend for friends. They liked them. I didn't get them so damned salty this time.
That's right, I said eggplant meatballs.

Eggplant is one of those food I really want to like, but don't. It is always almost on the edge of enjoyable. It's probably because I've never had it when it's been prepared or cooked properly.
Whenever I see a version of eggplant I haven't had before, I always give it a try. One of these days I'll find some I like.

I think you'd like these plant balls. They taste nothing like eggplant at all.
