I've always been curious about this. Now I have my answer. Many "Live Chat" sessions with various vendors, help desks, etc. let the business see what you type whether you send it or not. I don't think I've ever typed anything "regretful" that I backspaced and retyped, but I've certainly often reworded responses.

Yep.

Also many websites can see what you do with your mouse (while it is over their window, anyway).  So if you hover over a link but don't click they still know it.

I didn't know, but would have guessed that was implied by the "live" in the name.
