Why is it a burn when it occurs from the rapid removal of all heat from the skin?

It's a medical/pathological definition.

Burn in that sense describes damage/destruction to tissue.

Chemical burn, electrical burn, etc.

I was told it was because the transfer of heat is so rapid it burns you from inside out so to speak. The heat leaving you body is what is burning you. Try working on a heat pump in dead winter with pre partially frozen hands and see what kind of a burn you will get.

I think the worst part with freon is the rapid removal of moisture.  If my hand wasn't so dry it wouldn't be so sensitive.
Still not as bad as the time I poured boiling water on my hand though.  That was fun.

In brazing class I soldered up two short pieces of copper pipe, threw it into a pile to my right, and looked in another pile for two more pieces to work on.  Didn't find any in that pile, so I tried the one to my right.  After that, I started dunking them in water when I finished.
