Yeah, I know. Pedestrian and run-of-the-mill. A good potato salad though, is a good potato salad (sorry for the tautology).
Over the years I have realized a couple of caveats for potato salad -
1. New (red) potatoes
2. Bacon
3. Red onion and green onion.
4. Finely diced celery
Potato salad is one of those things where it's either hum-drum or better than everything else.

Red potato salad to me demands parsley in it. Kinda gotten tired of most mayo based, but a German potato salad is just fine.

Love German Potato Salad.
However, since most potato salad has celery in it, I generally stay away. I've found one store bought brand that I can tolerate.

Best German potato salad I've ever had was made by my friend's mom, Mama Groninger.
Yeah, she grew up in Germany.
I tried to duplicate it for many years and never could.
I generally like most potato salads. The local Safeway chain has two good varieties -- three potato (that has an orange cast but doesn't have sweet potatoes), and bacon blue cheese.
The local Giant chain's potato salad generally sucks the fingerling.
