Pork loin (stuffed)

^^^I have made this for years after reading about 'boiled cider' in New England cooking. I add some apple pie spice to mine after it finishes reducing. I use it most commonly on pancakes/waffles/dutch babies.

What I think I might do.
Instead of adding apple to the filling, I will sauté some apple in butter then add cider and reduce for a glaze.
