Hands down the best fish I have ever eaten in fish and chips was fresh Icelandic Cod. Being stationed in Iceland for a while didn't hurt either. The USO would have a Friday night Fish and Chips feed and the galley had fish available every day at one meal or more.

The only downside to being stationed in Iceland was the alcohol was rationed and the lack of dental hygeine/care in otherwise gorgeous women.

Sounds disgusting, but it's amazing how good fried pickles are.

At least until they cool down. Then they are turbo disgusting.



The only fish I've ever had that I like better than cod has been striped bass taken out of the Chesapeake Bay earlier that day.

If you can find them and handle the cost, tree nut oils such as almond or walnut are truly amazing for batter fried anything, especially fish and chips.

Having been in fish and chip shops run by Brits while I was in Australia and seeing a dozen or more varieties of fish on offer, I have to wonder at some of you guys and your exclusivity.  Freshness is the key.

Ahhh!  Fish and Chips......

Reminds me of high school when I worked for Arthur Treachers. 

Too bad they're no longer around in this neck of the woods.  :mad:
(Wish I could find some of their real chips)

My recipe for the fish:

Frozen Icelandic cod fillets to suit (about 1/2" thick)
Dip in warm salt water for a few seconds
Dredge in smashed corn meal
Dip in batter (Drakes)
Deep fry in 372 degree peanut oil until golden brown and fish are floating

Mmmmm!   =D
