Super-Pig?
« on: March 03, 2013, 01:02:38 PM »
http://mobile.nytimes.com/2013/03/01/us/with-iowa-swabian-hall-a-farmers-quest-for-perfect-pig.xml

A new iteration of an older cross-breed, by a guy that just might be one of us.  Most "culinary" folks rave, while one smoker says it's "too fatty".

Info on pigs for sale included.

Saw that guy on Bizarre Foods America the other day.  They covered the hydroponics feeding system as well.

It was interesting the cooked product looked good to me.

Awww, I got all excited. The roach coach on one of my air stations sold a Superpig sandwich. Toasted bun, mayo, fried egg, sausage patty, bacon, cheese. I think maybe deli ham too? I only ate a few as my continued existence can attest.

I'm so contrarian that I didn't respond to the thread.

Really?  While watching the show, I wondered if you might know the guy, but pushed that thought out of my head because, you know, Iowa is kind of a big place. :)

Iowa is a big place but we both alumnus of the same fraternity chapter, so that is how we know each other. We are doing a reunion at his farm this summer and cooking a pig or two.

Got a message from Carl: "A&E ...national geographic...discovery channel...animal planet...are in bidding war for our show. How cool is that?"

He has a show?

Or are they bidding to turn him into one?

And does he ship?

Most of his pork goes to a few local and big city restuarants or his pig roasting catering biz.

Fitz and I once made ham (or prosciutto) and mozzarella stuffed, bacon wrapped, syrup brushed pork chops.

Or as we call it, "the Homer Simpson" (or death by pork)

The pork chops were great, but the conversation that lead to them was even better

"What could make this bacon wrapped chop recipe even better?"

"I know! Lets stuff em with ham and cheese!"

I’m not saying I invented the turtleneck. But I was the first person to realize its potential as a tactical garment. The tactical turtleneck! The… tactleneck!

I found out my cousin has a friend-of-a-friend of Carl and had gotten a "superpig" piglet for his hobby farm.

I remembered this thread, and I went out there today to see it. I was kind of surprised though that it only had three legs.

I asked him why, and he said "You don't eat a great pig like that all at once."
I promise not to duck.

Carl is having a 6 cochon Boucherie on Memorial weekend, same day as another buddy's crawfish boil. I'm so torn.

Yes they are fresh crawdads, they are bought in LA, packed on ice and driven to Iowa, as soon as Coonass Joe arrives the boil gets started.

But Carl is cooking some of us a pig in June.

No, that is a John Deere t-shirt, worn by every other person in Iowa. Bibs have sort of fallen out fashion, only being worn by 2 out 5 people to church.
