Title: Cheesecake

Tinkering with a cheesecake recipe and wondering if anyone here has had a slice that was really yummy or knows of combinations that should never be put on or in a cheesecake.  (Rev, I still owe you a cheesecake.  I haven't forgotten)

Current tinker is a chocolate mocha cheesecake.  Not sure if it will work, but it sounds fun to try.

I like the concept of "turtle cheesecake" (not made with real turtles, but with chocolate, pecans, and caramel) but I've never tasted one I really liked -- just plain cheesecake, or cheesecake with berries is much better.

Pumpkin is nommable, and never lasts long during the holidays...

I make my lemon cheesecake with lemon juice and lemon zest.

Most "American" cheesecakes are way to heavy for me. I used to go to this little german place and they made the best cheesecake I have ever had. It was much lighter than the cheesecakes we have in the U.S. All I have to do is find some Quark and I will try it at home, because I can't find the cheesecake made any where local.

I have to find my dad's recipe for crusts.  He used to work for Gordon's, then Walbaum's when we lived in Nebraska.  He was always bringing little "experiments" home for us to try.  :)

How hard is it to mix a little canned pumpkin with your cheezcake mix or pancake batter?  Even easier if you get canned pie filling instead of unsweetened canned pumpkin.  Both are available year-round.

You might like this.  I've made it before and it wasn't heavy and sickly-sweet enough for my taste ;)

German Käsekuchen
Source: "The Joy of Cheesecake"

Special equipment:
   * sieve
   * 9 inch springform pan

Ingredients:
   * Muerbeteig crust
   * 3 cups (1 1/2 lbs.) cottage cheese
   * 1/2 cup cornstarch
   * 1 tsp. baking soda
   * 1 cup granulated sugar
   * 4 large eggs
   * 1/2 tsp. grated lemon rind
   * 1/2 tsp. vanilla extract
   * 1 cup sour cream
   * 1 cup raisins

Instructions:
  1. Preheat oven to 375°.
  2. Press the cottage cheese through a sieve.
  3. Combine the cornstarch and baking soda and set aside.
  4. In a large mixing bowl, combine the cottage cheese with the sugar, eggs, lemon rind, and vanilla. Beat until smooth.
  5. Add the dry mixture to the cheese and blend. Stir in the sour cream and the raisins.
  6. Pour the batter into the prepared crust and bake for 1 hour, or until done. The center will remain soft. Turn off the oven and prop the door open. Allow the cake to cool to room temperature. Serve at room temperature as well.

   * 4 tbsp. butter

   * 1 large egg
   * 1 tsp. baking powder

Instructions:
  1. In a large mixing bowl, blend all the ingredients, cutting in the butter and working the mixture with your hands until it is thoroughly mixed and workable.
  2. Divide the dough into 2 equal portions. Use one half to line the bottom of a greased 9" springform pan, the other to line the sides.  Either roll out the dough or press mixture into pan with your fingers. Chill before filling.

Tell me something I don't already know.  I already have a spot reserved for me somewhere warm and toasty and it has been decided if I'm the first one there, I have to remember to bring the wagon with the hot dogs, smores fixin's, and adult beverages. 

Besides, baking is stress relief for me, and I'm tired of always doing cookies and brownies.  I need a new challenge.  ;)

Well if you're just looking for stress relief, I absolutely adore bread pudding with whiskey sauce (the more moist the better), creme brulee, blackberry cobler, and apple pie.

Creme brulee, haven't tried it yet.
I have a good cobbler recipe I'm dying to try.  If it works, I'll make sure to let ya know for quality control.  :)
Apple pie has been hit or miss.

Lemon brownies?  Are those lemon bars by another name?

This is probably my favorite recipe for them.  So many of the recipes have only a thin layer of filling, and they don't use lemon zest.  To me, a thick layer of filling, and the added punch of using fresh lemon zest makes all the difference.

I bake a lot, and desserts are a specialty.  I make a delicious hazelenut cheesecake (hazelnuts are an Oregon specialty) with roasted chopped hazelnuts and Frangelico liquour.



Lemon Bars
Yield: 9 servings
Time: About 1 ½ hours, largely unattended

Butter for greasing the pan
2½ cups all-purpose flour
¾ cup powdered sugar, plus more for garnish
½ teaspoon salt
1 cup (2 sticks) butter
6 large eggs
2¼ cups sugar
1¼ cup freshly squeezed lemon juice
3 tablespoons grated lemon zest

1. Heat the oven to 350°F. Grease a 9-inch square pan. Combine 2 cups of the flour, the powdered sugar, and the salt in a large bowl. Add the butter and blend with a pastry cutter or your fingers until the mixture resembles coarse meal. (You can also do this in a food processor, but don’t overprocess it.) Press into the greased pan, pushing the dough all the way up the sides. Bake until the edges are golden brown, about 20 minutes, then remove and reduce the oven temperature to 315°F.

2. Meanwhile, in another large bowl, whisk together the eggs and sugar until smooth. Gently stir in the lemon juice and zest. (To minimize aesthetically displeasing little bubbles on the top of the bars, avoid whisking further.) Fold in the remaining ½ cup flour.

3. Pour the egg mixture over the hot crust and bake until the curd is set and no longer jiggles when you move the pan, 35 to 45 minutes. Cool thoroughly before cutting into bars. Dust with powdered sugar and serve.

The "Brownie" Batter

3/4 cup all-purpose flour {King Arthur All-Purpose Flour}
3/4 cup granulated sugar
1/4 teaspoon salt {Sea Salt}
1/2 cup (1 stick) unsalted butter, softened
2 large eggs
2 tablespoons lemon zest
2 tablespoons lemon juice

Tart Lemon Glaze

1 rounded cup powdered sugar
4 tablespoon lemon juice
8 teaspoons lemon zest

Preheat oven to 350°F. Grease/Spray an 8-by-8-inch baking dish with butter/cooking spray and set aside.
Zest and juice two small/large lemons; set aside. {whatever you have}
In the bowl of an electric mixture fitted with the paddle attachment, beat the flour, sugar, salt, and softened butter until combined.
In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until combined. Pour into the flour mixture and beat at medium speed until smooth and creamy, about 2 minutes.
Pour into baking dish and bake for 23-25 minutes, or until just starting to turn golden around the edges and a toothpick inserted into the center of the brownies comes out clean. Allow to cool completely before glazing. Do not overbake, or the bars will be dry. {even with the yummy glaze}

When brownies are cooled completely, make the glaze...sift the powdered sugar, add lemon zest and juice, and whisk together all three ingredients. Spread 1/2 the glaze over the brownies with a rubber spatula.  Let glaze set.  Spread the remaining glaze over the bars, and let it set.  This glaze does not harden like most. Cut into bars, and serve!

I would use cream of coconut and Malibu coconut rum, myself. I would garnish the top with some toasted coconut.

I was thinking of the Malibu.  I need to get rid of the leftover bottle a girlfriend left here, anyways.  She said use it for rumballs.

both. A smoked salmon cheesecake makes rockin' brunch or cocktail party grub.

Also made a cheesecake with a praline sauce that was well received. A Souther Living recipe IIRC.

I live with a grumpy old man who is well known for raiding the kitchen at night. Unless I stash it in my bedroom (and figure out how to keep him out when I'm not home) emergancy chocolete disappears down his gullet.

Co worker of mine when I was still in the old job had to do that.  Someone was always going into the fridge and taking her lunch.  She got smart and would bring a lunch of the nastiest combinations for a sammich she could think of.  After about three days of this, her lunch was left alone.

I had a roommate with a sweet tooth and a tendency to eat entire boxes of cereal at once. Thankfully the only food of mine that tempted her were the oreos. Scooping out part of the cream and replacing it with toothpaste ensured she left my food alone after that!  >:D

I had a roommate with a sweet tooth and a tendency to eat entire boxes of cereal at once. Thankfully the only food of mine that tempted her were the oreos. Scooping out part of the cream and replacing it with toothpaste ensured she left my food alone after that!  >:D

I wish I had thought of that, I have to look over my food and come up with some devious plans, I have to drive anywhere from 40 to 250 miles to buy food.

Tinkering with a cheesecake recipe and wondering if anyone here has had a slice that was really yummy or knows of combinations that should never be put on or in a cheesecake.  (Rev, I still owe you a cheesecake.  I haven't forgotten)

Current tinker is a chocolate mocha cheesecake.  Not sure if it will work, but it sounds fun to try.

When's good to swing by for said cheesecake?

I was thinking Iceland, but strings guilt tripped me into Wisconsin instead...

I was thinking about flying to Iceland as there's some good deals these days. Yanno, climb a glacier or volcano, see the Northern lights, find some nice Icelandic girls, sauna, etc. Strings was like "If you don't come out to Wisconsin, I'll tell spoon and Terpsichore you don't love them anymore"

Dude, seriously, you suck. I could have been neck deep in an Icelandic sauna under the Northern lights, with a bottle of Brennivín and half a dozen nice Icelandic girls. Ah hell, probably would have ended in another pile of corpses in some former Cold War sub base or volcano or something.
