Was digging around in my freezer a few days ago making room for dog food and came across a corned beef I'd forgotten I bought after St. Patrick's Day.
So, yesterday was crockpot corned beef, cabbage, and potatoes. YUM!
And tonight for dinner? I'm thinking hash and eggs with the left overs.
And... I found a second one that's still in the freezer!

I hate cabbage but try to keep a corned beef in the freezer. Makes a nice meal.

Always nice to find some goody overlooked in the freezer, a couple weeks ago I found 5# of my good bacon that had been shifted under a couple packages of squaush. HAPPY DAY!.

I just don't know who you are anymore, man...
Cabbage is one of my favorite foods. Sort of a given since I'm German, and sauerkraut juice runs in my veins.

Dad won't touch sauerkraut, but he'll eat cabbage like there is no tomorrow.
He'll stuff himself silly on one of my made up throw everything in the pot and see what sticks crockpot messes:
chopped up head of cabbage
sausage (usually kielbasa, but I've used New Orleans Boudin and a few others)
chopped onion
green pepper
a few cloves of garlic
vinegar (balsamic or red wine, which ever I have on hand)
If anything else will fit in the pot and seems like it would work, I'll throw that in too. Usually it's mushrooms.
I'm actually scared to try a similar trick with spinach instead of cabbage. He loves spinach even more that cabbage and I could see himself actually eating himself sick on that. :lol:
