Title: When you just want to watch the world burn: corn casserole

So this is a variant on cornbread, the article describes is as being between cornbread, corn pudding and corn souffle.  It looks a lot like the Mexican cornbread that I make that has a can of green chilis in it.

Very popular in Iowa at potluck/holiday dinners, we call it scalloped corn.

"Corn Bake" in Illinois.

Great stuff. I bring it to every office Christmas Party and bring none (or little) of it home.

It and Green Bean Casserole are the sides that mean the Holidays to me.

Little trick- if you want to make it, melt the butter in the dish you plan to bake it in and use the butter to grease the sides. Really quick prep food.

Had that at T-giving a few years ago for the first time. Really like it.

It's very similar to the base of the Chicken Tamale Casserole that's posted in the Vouched Recipes thread.
