Title: Beef "Country Style Ribs" (obviously not ribs)

I bought a package of these at Aldi a few days ago.  They were reasonably priced to begin with, then marked down $2.  I haven't opened the package yet but they seem to be boneless.  I know pork country style ribs are just skinny pork chops; I think cut from the front end of the loin.  I've never heard of beef ones before, and these look too small to be the same cut.

Looks like good meat to braise or pressure cook, a bit fatty and tough-looking at the same time.  So I thought I'd make Beef Bourguignon in the InstantPot, or cut them up for chili or beef stew.  Am I on the right track?

Country-style beef ribs are cut from the chuck eye roll, they aren't ribs or short ribs.

Tiny boneless chuck roasts.  Thanks!  So they should be good for braising?  Or even boiling.

Depends which way they were cut, might be a tough cut of meat. Might be good stewing meat for beef and noodles.

I'm allergic to beef, so I don't pay attention to the usual cuts of beef or how to cut them anymore.

That's how I cook my flank steak and skirt steaks. Works like a champ, great for fajitas. You get a nice touch of charred meat to go with the rare to med rare meat.

Could be worse, I could be allergic to dairy or bacon.

I do miss a grilled beef burger or a butter fried beef burger. My last steak was back when they were liquidating the beef herds and I think I got an old dairy bull ribeye, it was the nastiest steak I have ever eaten, worse than lean grass fed.

The meat (beef/pork/lamb) allergy seems to be spreading. One of the culprits implicated in causing the allergy is the bite of a Lone Star tick and it just isn't in Texas.

I figure I got bit by a tick, already had Lymes once (I don't wish that on anyone)

So far I'm fine with other red meats.
