I just use the recipes in the book. I like the apple oat bread, but I tweek it by adding more apple and apple juice concentrate.

Here's one of my favorites. Nothing exotic, but makes Great toast !!
Buttermilk & Honey Bread:
Liquids first then load to dry with yeast last.

3oz warm water
3/4 cup buttermilk
1 tbls butter
1 1/2 tbls honey
1/2 tsp sugar
1 1/2 tsp salt
3 cups BREAD flour
1 tsp active dry yeast

makes 1 1/2 lb loaf.
 I tried for years to make the bread that my grandmother, and then my mother made, but they never measured anything, they just knew how much stuff to use.
I'm REAL close with the above recipe.
The only thing that mother did different, was not to add honey, and she use to rub the dough with bacon grease as it rose each time, and when they came out of the oven.

This one comes out amazing. Cornmeal and molasses, a toasting bread.

Bread was made in Zojirushi's best breadmaker, the dual-beater X20 that really throws the doughball around, so I can't vouch for the more basic types of machines. This has to be cooked well and have good proofing cycles.

Quote
Anadama Bread

Yield

1 (1 1/2-pound) loaf, 12 servings
Ingredients

    * 1 1/2  cups  water, divided
    * 1/3  cup  yellow cornmeal
    * 1  teaspoon  salt
    * 1/3  cup  molasses
    * 1 1/2  teaspoons  vegetable oil
    * 3  cups  all-purpose flour
    * 1  package dry yeast (about 2 1/4 teaspoons)

Preparation

Combine 1/2 cup water and cornmeal. Bring 1 cup water and salt to a boil in a small saucepan. Stir in cornmeal mixture, and cook 2 minutes or until thick. Stir in molasses and oil; cool.

Lightly spoon flour into dry measuring cups; level with a knife. Follow manufacturer's instructions for placing flour, yeast, and cornmeal mixture into bread pan; select bake cycle. Start bread machine.

And this is the cookbook of awesome:

You can get a 20 lb sack of bread flour at Sams for ten bucks.  Portion into gallon ziplock bags.  It will keep in the freezer darn near forever.

Regular white bread

1-1/3 c water
4 c flour
2 tablespoons softened butter
2 tablespoons sugar
2 teaspoons salt
2 teaspoons yeast

2 lb loaf

Onion bread
1-2/3 + 1 tablespoon water
1 packet onion soup mix
1/4 cup dried onions (diced or flaked
Mix together and let stand for 30 min to allow onions to reconstitute

Put in machine and add:
2 tablespoons toasted sesame oil
4 c flour
2 tablespoons sugar
1 teaspoon salt
2 teaspoons yeast

2 lb loaf.
