One thing I've noticed is that people want alot of variety in thier coffee.  The amount of variations ordered in a starbucks, or even available in a 7-11 anymore, its just silly.  Also, how much can you actually carry on a pedal cart? 
If you know your city, you can hang out where people will be looking for coffee.  Right where they get off the subway, for instance.  But it doesn't really look like a great business model to me.

Think of the training benefits of pedaling around a multiple hundred pound coffee cart.  You would end up with guads of steel.

True.  Might be an OSHA issue in the winter though...
