Sir Loin of Pork
Thin sliced and sautéed in olive oil, garlic, chile powder, until almost cooked thru. Still a little pink, I use some Ancho and Chipotle chile powders. If you like it hot use more Chipotle. Remove the pork to a bowl and in the dripping saute a coarsely chopped onion and drained canned peaches. A tablespoon of dark brown sugar and the same amount of Balsamic vinegar. Put the pork and juices back in to cook to your level of "done" and serve over egg noodles or gnocchi. You can see I like gnocchi, little potato dumplings.

Pork with sweet potatoes, apples and Craisins. Dried cranberries.
Same cooking instructions for the pork, skip the chile and garlic. remove to a bowl.
Peel and cube the sweet potatoes, about 1/4 inch. Put them in the drippings and add one can of chicken broth. Bring to a boil and throw in a cup of Craisins, chopped apples and the pork. Cook until the potatoes are tender. I sprinkle a little bit of Thyme in while the potatoes are cooking. Serve in a bowl with some French Bread for the juices.

Big poppas stupid easy taco salad/burritos/tacos

1 lb hamburger meat
1 can of rotelle diced maters/chilis
1 packet Spanish rice mix
1 packet of taco mix
Optional:
1 can of sweet corn, drained
1 can of black beans, drained and rinsed

Brown hamburger in deep dish pan, then follow directions for taco mix
follow directions for spanish rice in the same pan with the taco mix (add water, bring to boil, add spanish rice)
Before you cook the water down, add rotelle, corn, beans

Serve in taco salad, as burrito or enchilada mix, or in tacos.

So far, everything sounds good. On Chuck's Carbonnades, make sure you really brown the meat! Corbonnades sounds kinda like carbo for a reason ;)

I rarely use a receipe because i can't spell it! Seriously, most things are throw togethers, and pretty danged good. Some are old standbys, but I'll look at recipes for ideas and brew up a variation.

Tonight I'm cooking a crock pot Chicken Pot Pie. Normally, Id just throw a pot pie together, but son & DIL & the 2 little ones are coming over. They'll have Thanksgiving Dinner w/ his Mom(my ex). She's a good cook & his twin 1/2 sis's will be helping so it'll be a feast. Now I'm sticking pretty close to the recipe except I started it on stove top tonight, into the fridge then crockot in AM because of time constraints!?

I pan seared some filet mignon tonight. It was great and easy. They say to use cast iron but I used stainless.

Get pan hot as hell. Put butter and olive oil in pan. Swirl around

Sea salt and black pepper on filets. Make sure they are both dry and room temp.

4 minutes per side in hot as hell pan.

Lower heat, put some sliced garlic in bottom of pan and simmer for another minute.

Remote steaks, drizzle pan drippings/ garlic over them. Let sit for 10 minutes under foil

Also, a crock pot or slow cooker is your friend.

French Onion Soup

Saute Onions in butter until browned, dump in crock pot.
Beef stock
Red wine (The cheaper the better has been my experience)
Wait until the alcohol has boiled off.
Bread slices, cheese (Swiss or Provolone or your choice)


Lawdog's Texas Chicken Soup
Although I change it up and make it stew by not adding in the chicken broth, and adding a can of diced tomatoes.

Have you gone through the recipes that Brigid has ?  Lots of good ones here:   Home on the Range  You gotta scroll about 2/3 of the way down to get to the list of recipes on the right hand side of the screen.  I've tried several of them and all have meet with two thumbs up from an 11 year old boy, if that gives you any help.
Some days even my lucky rocketship underpants won't help.
