I suspect that the rig used in the performance has a microphone, and the sharp sound of a clap triggers a momentary attenuation of the magnetic field that is manipulating the ferrofluid.
Cool stuff though, much better for visualization of lines of magnetic flux than iron filings. Wikipedia has a short write up here:
