Tomato sauce help

I put my Christmas gift to use (a food mill) and I'm making a big pot of sauce from all the frozen tomatoes from the garden.
I have it cooked down and it has a bite to it. I have added some sugar but I don't want to add any more. What can I do to get rid of that before I jar it up? It has been cooking to whole time with a whole onion in the pot. (I remember my grandmother doing this)
I needed a mod to change my signature because the concept of "family friendly" eludes me.
Just noticed that a mod changed my signature. How long ago was that?

Does your food mill puree everything to mush of just chunk stuff up?
The seeds can have a bitter taste to them if you milled them up.
Spoon off a cup and try seasoning that to taste and keep track of your ratios.

Nope food mill separated the seeds and skins. Those did not go into the sauce.
I needed a mod to change my signature because the concept of "family friendly" eludes me.

Back up a bit.  
What are you trying to do, put the tomatoes up in canning jars?  Do you have a pressure canner or doing a boiling water bath?

You can get rid of some of the tartness with a pinch of baking soda, but it is not safe to do that before you can it unless you use a pressure canner @ 10+ PSI of saturated steam.  You can add a pinch of soda when you actually use the canned tomatoes.

Also, tomatoes will mellow after a 24 hour or so rest from the cooking process. One reason lasagna and other such dishes taste better the next day.

Was going to suggest the carrots. We canned some tomato sauce a couple years ago, it ended up super acidic. It takes a lot of sugar and/or carrots.

We've also gone so far as to mix in some baking soda to nullify the acid, this actually works pretty well if you're not on a sodium restricted diet, and you don't mind the somewhat "fluffy" texture that can result with some sauces.
