Castle Key mentioned how does one make Jerky in the bad dog treats thread.

Anymore I use HI Mountain Jerky cure and dry it over for 8 hours in a dehydrator.

I use low fat ground beef, 93% or better, mix with cure I buy at local cabela's, put on dehydrator using jerky gun and dry overnight.
I"ve gone too far with dehydration once and produced 'meat chips.'  :laugh:

1 tsp each of salt, pepper, garlic, onion, honey, and Tabasco. Mix into 1/4 cup Worcestershire sauce, and marinate 1/4" strips overnight. Takes about 6-8 hours in my dehydrator, haven't tried the smoker I got this summer yet.

I've tried adding all sorts of other stuff, some were OK, but I always keep coming back to that recipe. Steak or roast is very much preferred over ground.
A plan is just a list of things that doesn't happen.
Is defenestration possible through the overton window?

I do both strip and ground jerky but I prefer the strip meat myself. My hunting buddy wif no teef prefers ground. Slicing to a uniform thickness is the key to getting consistent drying with strips. I like to use a little apple cider that has started to age and fizz in the marinade, just a little cider vinegar twang to it, along with the salt, cracked pepper, garlic, cayenne, cumin, etc. I also smoke with apple wood or a mix of apple and hickory for my jerky.
What we have here is failure to communicate.

It is not acceptable to start a new thread to avoid a thread drift!!

I do not have a dehydrator, so I would want to focus on an oven or smoker method.

Any feelings on this? I can get my smoker to stay really low and slow at about 175 deg for a long time, so that may be the way to go.

Focus on the box fan method. It actually dries the meat without cooking it.

I'll describe it on the way home.
