Outdoor cooking with a Dutch Oven is the only use for charcoal briquettes.
Some days even my lucky rocketship underpants won't help.

Charcoal briquettes are nice because they are consistent when grilling.

Actually, I'll use them when I'm slow roasting something with indirect heat. Lump hardwood charcoal just burns too fast and too hot for that kind of cooking.

Lump for searing, briquettes for roasting.

I prefer Kingsford because every bag is consistently the same.

If you ever purchase one of the kamado-style ceramic grill/smokers, you'll want to stock up on lump hardwood as that's the only thing that is recommended for them.

Castle Key has a Big Green Egg, and it does an absolutely fabulous job at smoking pork butts, ribs, and birds.

I'd love to get one but they are incredibly expensive.

Ditto, if they were cheaper I'd consider one. I do most of my work on my Weber kettle.

I'll typically get a huge, thick pan screaming hot before dumping in lots of butter and garlic, then sear the meat for about 45 seconds on one side, then 20 or 30 on the flip side.

If it's NY strip I'll sometimes let the fat edge render a bit first

I did see something about an insulated metal kamado type grill/smoker some time ago, but now I can't find it again.

IIRC it was between $200 and $300.

The absolutely fantastic thing about Castle Key's Egg is that he can literally start a fire, set the draft, put the meat on, and after a period of ensuring that the temperature is stable, walk away from it for HOURS.
