I tried this new recipe out yesterday. Simple, but not at all bad.
I made my own chicken stock from a bunch of thighs and thigh bones I had left over. I always like doing that because you get a lot more body with homemade stock.
I also added a pound of sauteed mushrooms because I had them and I needed to use them or lose them.
I did end up over cooking the chicken a bit, which is unfortunate. I should have added it back to the pot at the end of cooking, not along with the barley.
No matter what, though, a very good, hearty soup of chilly weather.
