Leftover central!

Tons of leftovers here at Mom's place...

YUM!


One of my all time favorite left over dishes is to take stuffing, mashed potatos, cut up turkey, and smother it in gravy and simply heat it in the microwave like an ersatz shepherd's pie.

Then there's the turkey pie we'll be having for dinner tomorrow -- turkey, potatos, carrots, onions, and gravy between two of Mom's pie crusts and baked until golden. Served with cider vinegar and green beans with bacon... Drool....

Tonight, though, I'm making Mom baked Shrimp Scampi...

There's nothing better than a sandwich made from left-over turkey, stuffing, cranberry, and mashed potatoes.  Mmmmmmmm.

I have this idea I want to try. Take the stuffing, compress it into a loaf, and let it dry for a while. Then slice it up like bread, and use it to make the sandwich with.

I haven't tried it yet; I'm sure it's not that easy.

I know what you mean by leftovers.  Ate them for several days.

On the good side, my family made 75 dozen tamalles on Saturday.  I think we polished off about 20 dozen before I left on Wed.

It's what three hours of sleep turns sausagemeat stuffing into.

I had bubble and squeak yesterday. All the leftover veg thrown into a frying pan with some goosefat.

Tonight I had leftover ham cubed small and heated in a skillet, Cooked some frozen peas, thawed out some alfredo sauce I have in the freezer, mixed it together and had it over bow-tie pasta. Just like downtown.

Them tamales we made were the best batch in the last 10 years.  The masa was top notch this year!

I've got a dozen sitting in the fridge right now.  Bring a six pack of Tecate and we'll feast!
