Simple mathematics. Using their series of calculations, the number will alsways come out right (presuming you do the calcs right).

But how does it know what numbers I have chosen? There is no input into the game. I just keep the number in my head yet it gives me the right symbol. So how does it work?

Okay, here's a less cryptic explanation...

If you take the sum of the individual digits of any two digit number and subtract it from the original two digit number, your final number will always be a multiple of nine. If you watch the puzzle, it gives every multiple of nine the same symbol. So, the puzzle will always choose the symbol that it gives to all the numbers which are multiples of nine, and hence is also the symbol of the number you picked.
