How Do You Make Your Charoses?

Many many years ago I got disgusted with the typical Ashkenazi charoses of grated apple, cinnamon and red wine.  So I went with Maimonides' suggestion and used dates, figs, raisins, grated fresh ginger and red wine.  The result is delicious, like chutney.
