Sausage here we come!

Just got my sausage stuffer today.  Had a grinder attachment for a while.  Just need some pork fat, casings, and appropriate spices and herbs and homemade elk sausage will be on the menu.

Picked up enough casings and pork fat tonight to cover my needs for 25-30lbs of bratwurst type sausages.  Just need to sort out the other ingredients (spices, herbs, liquids, etc) and hopefully I can make a few batches (5# per batch) this weekend.

In about a month (next week I gotta go out of town again for a while) I need to dig the pork roasts out of the freezer and make some dry salami.  (about 10 pounds worth) 

I wonder if the inoculant that's been in the freezer for 6 or 7 years is still good or it I should order another package?  I'll just use 2 or 3 times as much to make sure there's enough viable cells -- and order a new package next time.
