i have 10 pounds of deer sticks in the smoker now.
20 pounds of bulk breakfast sausage ready to grind and mix and load into the 1 pound vinyl sleeves. The venison trim is thawing, and pork trim is ready.
I will soon have another 20 pounds ready to make my summer sausage. They will relax in the basement fridge overnight and enjoy a leisurely smoke tomorrow.
I called my favorite market to inquire about availability of untrimmed pork butt and found out they not only had some but they had it on sale for $1.19/pound.

I finally bought a vertical stuffer (on sale with some loyalty reward points) instead of stuffing off the grinder. wish i would have done this about 20 years ago. A learning curve regarding moisture consistency etc but mucho better and easy cleanup.
