For every group that throws a part of the animal away, there will another that celebrates it as a delicacy.
And they're called the French.....

Some days even my lucky rocketship underpants won't help.
Bring me my Broadsword and a clear understanding.
Get up to the roundhouse on the cliff-top standing.
Take women and children and bed them down.
Bless with a hard heart those that stand with me.
Bless the women and children who firm our hands.
Put our backs to the north wind.
Hold fast by the river.
Sweet memories to drive us on,
for the motherland.

Oh, I think some rural Chinese have them beat, there.
French is just questionable with fish heads in soup. Some Chinese is "OH GOD WHY WOULD YOU EAT THAT?!"

Not interested in tongue.
Who wants to taste something that tastes you back?
I went to England on a choir tour in 1986. While there we were served sandwiches. Growing up on a ranch I knew exactly what those slices of meat were, but no one else did. When told, everyone but me turned white. Then green. Then back to white.
It was tongue. And it was delicious!

The English have some weird foodstuffs.
I tried the "white bait" while there a few years ago. One of the locals couldn't believe I wanted to eat minnows. They were great; reminded me of smelt, in fact.
I did
not
try the black pudding! And I won't. Ever.

Black pudding is good. You don't taste blood. It's just a rich sausage made with pork blood, oatmeal and spices. Once it's cooked, it's just another sausage.
This is what it looks like sliced before it's cooked:
And after it's cooked:

My Dad used to cook tongue.
I HATED it, and I'm not a picky eater.
