I had black-eyed peas today, in memory of my Great Aunt Mary. She was superstitious, and BEP's on New Years Day was important to her. (oddly enough, not the greens part just the peas) So I do something with them every year in her honor.
They were from a can; I sauteed a half an onion (sliced) in a little sausage grease with a couple of dried chipotle peppers. Then added a few ounces of leftover pork stock to get rid of it, and simmered until the peppers were soft enough to rip apart with a spoon. Then added the can of peas, some garlic powder, black pepper, and thyme. Simmered for 5 minutes or so. Poured over a bowl of rice and sprinkled with hot sauce.
I like last year's BEP Falafel better, but these were closer to how Aunt Mary would've fixed them.
