I celebrated yesterday by lightly marinating my baby loin back ribs in a little fresh lime juice and tequila for 6 hours before doing the dry rub and 4 hours in the pit barrel smoker.
Yes, they were awesome.
What we have here is failure to communicate.

pat ribs dry with paper towel. 1 lime squeezed for the juice (or bottled lime juice equivalent) and about 1oz tequila per rack, mixed together and rubbed into both sides, put in a glass baking dish with any left over marinade and cover with plastic wrap in fridge overnight or atleast for 4 hours before the dry rub. I always use some yellow mustard rubbed on before the dry rub.
You can also just use the pre mix margarita stuff if you want more sugar and salt in the pre treat. My sister did this with Costco margarita for a wetter marinade and used less dry rub and they turned out really good also.

Cinco de Cuatro translates into the Fifth of Four.  I never know when I read it whether somebody meant Cuatro de Mayo, Fourth of May.  But I've seen it before!

Cinco de Quatro translates into the Fifth of Four.  I never know when I read it whether somebody meant Quatro de Mayo, Fourth of May.  But I've seen it before!
