Gizzard recipes?

Got 96 chicken and 11 turkey gizzards to do something with once I've slaughtered all the meat poultry.  I'd prefer not to give them all to the dog.  For those who like gizzards what are your favorite recipes? 

I know how to clean them, so that's covered.

Don't forget the hearts.

Cut them out, rinse out the blood, bread and fry.

They are about the size of your first knuckle on your thumb.

That is like a tailgate snack for 8-10 people.

For just a pound or so of gizzards and hearts, I quarter an onion and cut a stalk of celery in 3 or 4 pieces, enough water to cover. Bring to a boil, reduce heat a cover, simmering until tender, maybe 3 hrs. Love 'em!!!

This, chicken-fried in a pan, or deep fried if you have the means to do it.  My wife buys packages of gizzards at the market on occasion.   They make for a nice treat.

I saw this one night when I couldn't sleep and decided to bring it back from the dead since I made some a couple days ago.

Clean the night before. Any rough stuff and grisly bits get cut off.

For about two pounds I use two cups buttermilk and about half a cup of franks Red hot. Let soak overnight.

Shallow fry in a 325 electric skillit until golden brown. The crust is tougher than the gizzards.

Works for wings and drumsticks also.

And for the best gizzards ever visit Go Chicken Go in the Kansas City area.

My Midwest grandma always breaded and pan fried. I can’t imagine eating them any other way. Hearts the same.
12 years ago we ordered 25 free range chickens from a local old fashioned farmer friend. We said we would take  giblets. The poultry locker messed up and had not separated gizzards and hearts. When he asked them about it at pickup they handed him bags of gizzards and hearts already frozen. We got 9 pounds all in one frozen bag.
I tossed it in the freezer and my wife said we would never use it. When our daughter got married we found out on a Wednesday night we were hosting 16 people for dinner on Thursday. I thawed it all out and set up my fish fryer in front of the 1908 barn on saw horses and planks. I put my almost son in law in charge of all that and he and his army buds had a few beers and a blast frying them all up out there. We had people from all over the country here enjoying a Midwest country experience. While they were doing the chicken parts I was cooking a whole leg of fresh lamb over charcoal.
What we have here is failure to communicate.

Oh i did leave breading them in seasoned flour. I like Ms dash and celery salt but it is wide open on seasoning. Hotshot works good if the little girl is not eating them.

My dad used to wrap these with bacon and grill them, holding them together with a toothpick.  Or maybe he wrapped chicken livers with bacon, I can't remember which.  But they were good.

I like the concept of liver and onions, but in practice I can't stand the stuff.   I do like fried chicken livers, dunked in thick cream gravy with a lot of black pepper.  I also like braunschweiger (sp?) occasionally, in small doses.

Gizzards I generally give to the dogs.  But I've never enough of them at once to do anything with 'em.  If I did have a bunch, I'd probably use 'em to make dirty rice or boudin blanc (about the same thing)

At Thanksgiving, turkey gizzards go in the broth to make gravy, turkey livers don't go anywhere near the giblet broth.  I have fried the turkey livers (unbreaded and unbattered) in a little turkey or chicken fat and made kind of a pate with it, but it wasn't all that good.
