Why is it that cola soft drinks have much higher and more persistent heads than other carbonated soft drinks, like ginger ale or Sprite?

My guess?

The caramel coloring, or something similar, acts as a surfacant and that stabilizes the bubbles and makes them last longer.
Carbon Monoxide, sucking the life out of idiots, 'tards, and fools since man tamed fire.

In beer (and brewed sodas) greater lace and head is a function of polypeptides contained in the malts used for flavoring. It causes a foam that last longer and holds together better.  Roughly: more malts results in more head.

I suspect something in the color or flavoring of colas contains similar polypeptides, and that enhances the foam.
