Some things are better shipped via rail or boat.

I'm not sure the driver handled it well, and I doubt she weighs enough to put his tires at risk, but I'd buy that she would have trouble with seat belts.

I don't think that is true.  Weight is not the same kind of protected class as race or religion.

I'm not sure how her attorney could argue "stranded". She could order a Lyft XL, which she should have done in the first place. Though I doubt the seat belts in the larger vehicle would have fit.

Morbid obesity with an ass three ax handles wide seems to be a cultural bonus thing... I've had 'em who had to squeeze in the front door of the store, and it is a standard size... And they're almost always with a skinny dude who looks like he has been using all the substances.

There was a morbidly obese woman on my flight from Portland to Chicago yesterday.  Saw her in the waiting area and was praying she wouldn't be in my row on the plane.  Fortunately, she was not.  When I boarded she was seated in an aisle seat a few rows ahead of me.  When I walked past going to my seat I could see that she overlapped into the center seat about halfway.  Don't know if someone was assigned to that center seat.  I hope not as there was absolutely no room for them to sit.
