Ever wondering what spices go with each other, and in what?

Good reference material.

Resist the urge, though, to add ALL of the recommended spices to one dish.

Carrots, for example, work and play well with a lot of spices, but not all of the spices work and play well with each other.

Time for my spice story again.  I'll make it brief.  Instead of spelling everything out in precise detail.

Love cinnamon toast before bed.  Made toast.  No glasses.  Got cinnamon and chile mixed up.  Same supplier, same style jar.
 
Yuck.


Part two:  Months later I got some tacos from the Taco ding-dong.  I like extra chile on them.  Reached in spice shelf for the chile.

Yuck.

Slow learner.

It is much more powerful to seek Truth for one's self.  Seeing and hearing that others seem to have found it can be a motivation.  With me, I was drawn because of much error and bad judgment on my part. Unless you are cooking all day with multiple spices and your taste and smell is on overload. Cajun/Creole cooking will do that.

It's OK-ish as far as it goes, but there are a lot of spices on my spice rack that are not listed there.

This http://www.frontiercoop.com/prodlist.php?ct=spicesaz is just the first one Google found that has an easy-to-use A thru Z list of spices.  And it does not stray very far from white bread cuisine into the various ethnic cuisines.  Seriously - anybody want to guess what the most recommended spice for iguana is?  (Hint - it's not salt.)

When I want to try a new combo I'll smell the spice while tasting the food. So far it's proven to be the most sure fire way of knowing what the combo will taste like before actually adding the spice.

OK. Very easy... coat the carrots lightly with olive oil, sprinkle lightly with kosher salt, and roast until just soft.

While they're roasting, melt a stick of butter together with a teaspoon of dill weed and 2 teaspoons of freshly ground ginger, and 1/2 teaspoon minced garlic in a skillet over medium heat. When the butter foams out, remove from the heat and pour into a serving bowl. Add the carrots and toss to coat.

Very tasty.
