OK. Very easy... coat the carrots lightly with olive oil, sprinkle lightly with kosher salt, and roast until just soft.
While they're roasting, melt a stick of butter together with a teaspoon of dill weed and 2 teaspoons of freshly ground ginger, and 1/2 teaspoon minced garlic in a skillet over medium heat. When the butter foams out, remove from the heat and pour into a serving bowl. Add the carrots and toss to coat.
Very tasty.
