Had a "I wonder what would happen if..." moment this weekend. I was making bread and happened to spot a package of onion soup mix in the pantry. Hmm.... Onions? Bread? Onion bread?
It worked! Well, sort of. The first load was too dry and didn't rise much. The second was too wet and rose too much, then collapsed. After playing around around with the water measurement I came up with a bread-machine-friendly recipe.
Makes a 2 lb loaf.
1-2/3 c +1 T water
1/4 c dried onions
1 pkg onion soup mix (I used Liptons)
4 c sifted bread flour
2 T toasted sesame oil (butter can be substituted but it will not be as flavorful)
2 T sugar
2 t salt
2 t active dry yeast
Add onions and soup mix to water. Microwave on high for 3 minutes and let stand for 5. Pour into bread machine pan. Add remaining ingredients in order. Use the White Bread / Light Loaf setting (the default on most models).
It's dang tasty!
