Bread machine recipe - oatmeal onion

Necessity was definitely the mother of invention on this one!

I was making onion bread and thought I had another bag of flour.  One cup short of a recipe, and staring at an empty spot where I thought the extra flour should be I made a snap decision to substitute oatmeal.  Dang if it didn't work!  And quite well, I might add.  I had to tweak it a bit, but here it is.

1-2/3 c water
1 packet onion soup mix
1/3 c dried onions
let stand for 30 minutes

1 T butter or toasted sesame oil
3 c bread flour
1-1/3 c 1 minute oatmeal
1 t salt
2 T sugar
1 t yeast

Use the white bread setting.  Makes a 2 lb loaf.

Weird side note ... prepared as above it will start out looking too wet, but will slowly dry as the onions reconstitute.  However, if you let the onions completely reconstitute (like I did when I accendently left the wet mix setting for a couple of hours) it will start out looking dry, but will slowly moisten as the flour draws moisture out of the now-completely-reconstituted onions.

It's great with roast beef or pastrami and muenster, lightly toasted with a dab of mustard.

Wow, this does sound good.  I would like to try this with a Reuben sandwich.
