My low sodium pizza sucked.. ideas?
« on: June 16, 2009, 11:00:10 PM »
2 cups white flour
2 cups whole wheat
yeast
honey
water
olive oil

The dough was fine.

The sauce was no salt added tomato sauce with basil, oregano, and some chilli powder simmered for a while.

Topped with sliced garlic, diced grilled chicken, fresh tomatoes, onions, and green pepper.

No cheese

It did not taste like anything.  Any thoughts on how to give it some taste?

That's not low sodium, that's no sodium. You need to add salt. Try sprinkling a little salt on just before you eat it. You'll use less that way.

At the very least, season it liberally with a salt-free herb seasoning blend such as Mrs. Dash or the like.  I myself am partial to the Costco house brand Kirkland Signature organic salt free seasoning.

Hell with the salt, thats not even pizza.
As much as I hate living in NJ you can't get good pizza anywhere else.
Where is the semolina flower in that dough? Garlic and onion in the sauce?

Would it kill you to add a little salt?....  ;/

Bread without salt tastes awful. Try a minimal amount, 1/4 teaspoon, in the dough mix.

High acid additions like lemon or lime juice.

I was wondering where you ever found a recipe like that living in Montana, then I remembered you lived in Missoula. Then it made sense! =|

Like someone else said, try to sprinkle a little salt on it before you eat it, or possibly a salt substitute.

If I take my cardiologist literally?  yes.  In reality, no.  This was mostly an experiment.  Next I'll probably try more spicing and maybe a bare sprinkling of cheese.

No cheese = no pizza.

We make a homemade pizza without adding any salt to the crust, sauce, or sausage, and it comes out fine. Seasonings include garlic, fennel, oregano, and crushed chilis. Toppings (besides the homemade sausage) include sliced tomato, diced green pepper, diced onion, and sliced mushrooms.

Pepperoni is good too, but not essential, as it does have quite a bit of salt. (We slice it up & nuke it just a bit to drive off some of the excess grease.)

But we DO use cheese - mozzarella and just a bit of Romano. The cheese and meat probably account for 99% of the sodium.

I do that too. Except I just wind up eating the "Pepperoni Chips" before they ever get on the pizza.
I promise not to duck.
