What's for dinner ?
« on: February 09, 2010, 01:07:43 PM »
I'm browning the onions and chicken in the cast iron skillet for a batch of Lawdog's Texas Chicken Soup (mines a bit thicker so we call it stew).  The beans, corn and the other ingredients are already in the crockpot.   YUM, two-three days of meals.  Just in time for the bad snow storm.  =D

What are you folks having for dinner ??

Okay, everythings in the crock pot and the house smells like saute'd onions.   MMMMMM

The deadly killer attack beagle came in the kitchen long enough to sniff around, then went back to laying on the floor beside the couch, assualt prep, in readiness to bark his fools head off, for when the mailman arrives.

Suffered from lack of patience, so I sliced up some chorizos, fried them together with onion, garlic, bell peppers, added cream fraiche, added some chili sauce and spices to it, let it boil a bit, serve with pasta. Yum =). There's also some leftovers that I'll have tomorrow =).

I ask my Lady what is for dinner and usually get the stock answer, "What, we just ate, you can't be hungry again!"  My answer is, "I am accustomed to eating at regular intervals, yesterday is not one of them."

Funny. I finished up the most recent batch of Lawdog Soup last night. For lunch, chicken salad sandwiches, made with ranch dressing in place of the mayo. For dinner, I don't know yet. Might be rice and beans, unless I am feeling ambitious.

Fajitas - left over grilled boneless chicken breast, sauteed with sliced red bell peppers and Vidalia onions in a skillet. Assembled individually by each diner on a warm tortilla with their choice of sour creme, shredded lettuce, diced tomato, and shredded cheese.

I had a big bowl of left over chili for lunch. I'm going to be working in the shop tonight so I'll skip dinner.

Tomorrow night is looking good. I found some fillets in the freezer I'm thinking about frying them up and making some hushpuppies. Make it feel like spring is here.

Those both look good, I will have to give them a try.

Stir fried pepper steak over brown rice.

Tonight is the first night I have cooked a meal in at least a couple of weeks, so I made it good.  Very thin slices of flank steak, a metric ton of fresh mince garlic, thin julliened (sp?) red and orange peppers and onions, chopped snow peas.  Perfectly stir-fried (my spouse seems to confuse stir-frying with stir-stewing, so it was nice to have it done right), with a simple sauce of soy sauce and ginger, with a little red wine and thickened just enough to glaze it nicely.

It was awesome.

Now I need to go run six miles and then finish re-learning wills and estates and trusts, and then some practice essays on the UCC.
