Jamablaya recipe

I got this from a friend a few years ago.  It gooood.

Jambalaya Recipe- by Mo Betta

(Serves ten)

Ingredients:1 stick  butter
               2  red onions, chopped
          5 green onions, chopped   
          1 large green pepper, chopped
               4 garlic cloves, chopped
          2 bay leaves
          1 jalepeno) pepper,with seeds, chopped
          1 tablespoon creole seasoning
          1/2 teaspoon ground chili pepper    
          1/2 teaspoon dried oregano

          2 tablespoons tomato paste
          1 lb andouille sausage (hot Italian may be used)-cut in half inch pieces
          Â¾  lb ham-cut in half inch pieces
          2 -14.5 oz cans of chicken broth
          1 - 16 oz can diced tomatoes (and liquid)
          3 cups long grain rice   
   
1) Melt butter in heavy dutch oven on medium/high heat, and add the first nine ingredients (stop after  oregano). Cook until veggies are tender- about 15 minutes.
2) Add tomato paste
3) Add meats, chicken broth, tomatoes and rice. Mix well
4) Bring to a simmer, then reduce heat to low, cover and cook for about 2 hours, stirring occasionally to keep the bottom from burning too much, although a little browning is pretty tasty.   

Serve with a bread of your choice.  Personally, I like ciabatta…but French is good as well.

I like to throw a half-pound or so of raw shrimp in there for the last five minutes of cooking, or until they turn pink.

Yeah, we also put shrimp and crab and other stuff in the mix.

Also, we make more than that just for the two of us, not ten. It's good for two meals for me, 1.5 meals for my wife.

If you can't find andouille, try Little Sizzlers "hot and spicy" breakfast sausage links.  They have a picture of a Tabasco sauce bottle on the label.

Yeah... I like the shrimp too, but my kids don't, and some folks end up in the ER if they eat it, so I add that to mine after the fact.
